We recently headed down to Chynna (Chinese restaurant) at Hilton Kuala Lumpur (Sentral) for their new dining concept which brings together a well-curated decadent dining experience and selection of delectable dishes. Aptly named “Ultimate Signature Feast”, the 5-course spread which includes seafood, poultry, and vegetable specials along with Chinese desserts is now available for a limited time for dine-in meals at Chynna.
Chynna features a warm ambience, decor with classic oriental details and a traditional Chinese herbal apothecary, as well as private rooms for intimate gatherings. The open dim sum kitchen and ancient regal dining area exude the charm of modern Cantonese and Shanghainese culture, as reflected in the cuisine and culinary creations.
The 5-course Ultimate Signature Feast comprises the following dishes:

- Buttermilk Prawns
- Honey Glazed Chicken with Crispy Ginger
- Black Pepper Chicken
- Asparagus with Scallop in XO Sauce
Wow! What an amazing start to the meal! We enjoyed each of the 4 dishes that make up this signature platter. Executive Chinese Chef Lam Hock Hin who helms Chynna informed us that these were some of the restaurant’s most in-demand dishes!
It’s really hard to pick one favourite all the four are simply outstanding. However, being someone who loves butter prawns, I must say that I enjoyed it the most, followed by the scallops which were juicy, succulent and flavourful.
Assorted Seafood Soup with Blended Mint
Yes, on paper it sounds rather weird but it was deliciously refreshing! The sweetness of the seafood was complemented by the minty freshness which was not overwhelming (so you don’t at all feel like you’re eating toothpaste!). I didn’t even leave a single drop of soup left in my bowl.
Simmered Vegetables with Egg White and Watermelon
This was a marriage of various tastes and textures, yet again being rather refreshing with the inclusion of the watermelon. The tobiko on top made it a rather fusion offering.
Wok-Seared Fresh Water Prawns with Homemade Egg Drop, Chili Sauce and Egg Fried Rice
This dish was simply addictive. I literally couldn’t stop eating it until there was not a morsel left except the shells. Chef Lam really put his skills into this one, making a dish that is flavourful, yet so comforting at the same time, which is something needed after many stressful months locked up at home. The fresh water prawn was fresh and sweet, while the sauce, oh my the beautiful sauce was the star of this dish with its umami, sweet, sour and slightly spicy taste.
Coral Weed Jelly with Wolfberry and Musang King Durian Mochi
(The picture above does NOT reflect the actual dessert that you’ll get as we tried this menu just before the mooncake festival and thus Chef Lam put together a healthy dessert of ginseng and a slice of mooncake specially for us. Thank you Chef Lam and the team at Chynna, Hilton KL!)
