Chef Dato’ Fazley Yaakob collaborates with Four Seasons Kuala Lumpur again

This Holy Month, come together in love and gratitude at Four Seasons Hotel Kuala Lumpur. Diners are invited to take a trip down memory lane with a feast curated by Malaysia’s favourite culinary celebrity, Chef Dato’ Fazley Yaakob. From April 24 to May 23, Sajian Merentasi Zaman (food across generations) will feature beloved recipes from Chef Dato’ Fazley’s childhood days, offering a precious opportunity for the whole family to reconnect.

“In a world where everyone is busy and caught up in their own lives, we understand the value of spending time with those who matter most – that is real luxury,” notes Vinod Narayan, Hotel Manager. “Our team is creating meaningful moments through thoughtful menus and caring service, bringing people together naturally.”

Drawing on a treasure trove of family recipes, Chef Dato’ Fazley recreates Malaysian dishes that have been lost in the mists of time and are rarely found on restaurant menus. Sample delights such as Nasi Tumpang Ayam Bakar Pasu (rice layered with different dishes, served on banana leaves), Puyuh Salai & Kulit Rambai (smoked pigeon with Rambai) and Urap Daun Kaduk & Telur Masin (kaduk leaves & salted egg). Each dish is prepared using healthy cooking techniques, so diners can forget about counting calories.

End the meal on a sweet note with an array of desserts, including crowd-pleasers like Serabai with Gula Melaka (local pancakes with palm sugar syrup), Penjan Ubi Kayu & Pisang (tapioca and banana), and Lempeng Kelapa (coconut crepes).

Along with herbs and spices, Chef Dato’ Fazley seasons his dishes with a liberal sprinkling of gratitude and joyfulness. “For me, cooking is an act of love that’s passed down from generation to generation. Nipah at EQ makes a bigger and better return with the month-long Citarasa Nipah buffet starting from 24 April until 23 May 2020. Nipah at EQ will be re-introducing fond memories of the yesteryears when the previous Nipah Coffee Shop was a former market leader for this season. The homely ambience and quality of the spread makes this buffet ideal for family, friends and corporate businesses, with over 100 lavish Malay dishes carefully curated for the feast.

The warm and inviting Malaysian hospitality at Nipah at EQ will be complemented by daily angklung and rebana performances at Nipah’s entrance. The open kitchen will treat diners to fragrant aromas and four (4) different menus on rotation featuring the culinary team’s timeless family recipes of comfort food highlight the heritage of Malaysian flavours.

For starters, there will be classic soups such as the Bubur Lambok Istimewa and Sup Gearbox, while the seafood on ice section is always a favourite with myriad fresh selections of mussels, tiger prawns, baby scallops and more. The carving station will have Kambing Panggang, while heartier favourites can be found at the main buffet area with dishes like Nasi Bukhari, Daging Salai Lemak Cili Padi and the signature Kari Laksa Nipah, which is prepared with a classic recipe that has been shared from the early days of Hotel Equatorial back in the 80s.

Chef Ali, the Chef de Cuisine, is known for sticking to classic, authentic flavours. Having grown up in Sabah means his meals growing up were fresh, simple and never overly seasoned. With more than 30 years of experience up his sleeves, diners can expect well-known dishes often found in celebratory Malaysian events such as weddings, open houses and street carnivals. At the outdoor live station, his signature Briyani Gam Johor (Ayam dan Daging) will be served with fluffy, long grain basmati rice and cooked with rich spices, vegetables and meat that falls off the bone.

Chef Afiq, the Chef de Partie of Nipah, has bagged many awards including the Gold Medal of Global Culinary Challenge Malaysia 2019 with his Nasi Lemak Heritage. This year, diners can indulge in his Satay Ayam, Daging, Kambing dan Itik at the outdoor live station. These freshly made upon order skewers are tender and juicy, with a lightly charred finish.

Be spoiled for choice at the delectable dessert counter with childhood favourites such as Aiskrim Malaysia, along with Aneka Kuih Melayu and Serawa Durian dan Pulut. The Classic and Deluxe Nipah Hampers will also be for sale with specially picked items like premium dates, pineapple tarts, kuih bahulu, traditional dodol, premium tea, pandan layer cake and ketupat cookies.

Latest Recipe at Le Meridien Kuala Lumpur has a traditional feast themed ‘Santapan Muhibbah’ with dishes specially curated by the hotel’s Executive Sous Chef, Chef Budiman and his team of culinary experts.

To start at the Malay appetiser station with a variety of Malay appetisers such as pecal desa, tauhu sumbat, acar limau, popiah basah, and nasi ulam. While you are there, help yourselves to different varieties of kerabu dishes such as kerabu lala served with green papaya, selom leaves, and pounded yellow chili paste, kerabu itik salai served with mangoes, cashew nuts and sweet and sour sauce, and acar nanas served with ginger and mixed spiced chutney.

Warm up to a selection of soups such as the hearty and flavourful Signature oxtail stew, Spicy chicken soup with chicken balls, mushrooms, celery and glass noodles, Moroccan lamb stew with baked beans, aromatic vegetables, yoghurt and potatoes, Asian-style spicy crab soup and prawn bisque served with coconut cream, vegetables, tofu and kaffir lime or sample the delicious Bubur Lambok, a traditional Malay porridge.

Chef Budiman adds a little twist of his traditional recipes into the variation of main Malay dishes he has lined up for our diners to take pleasure from. Be sure to try out the selection of main dishes featuring Gulai tulang rusuk lembu dan gulai pisang tumis darat, Kepah masak lemak with betik muda, serai and cili padi, Berbiri panggang with rempah baharah, cuka bawang putih and sos asli, and, Assam pedas ikan pari with bendi and haruman kesom. A traditional feast would also not be complete without some tender rendang kambing, accompanied with wok-fried vegetables and steamed white rice.

Don’t miss the hotel’s signature Kuah Lemak Putih Jejari noodles, Surime Kepiting (Crab broth with coconut cream, clams and dried shrimp chili paste), laksa Siam, mee kari, and sup herba accompanied by a variation of condiments and toppings to choose from.

This year, Pullman KLCC’s Sedap Restaurant will be donning several customs, featuring an Asian fusion menu, featuring traditional dishes with twists of their own, Ayam Bakar Tebu and Rendang Rusa, to locally infused Japanese cuisine; serunding Maki rolls.

Breaking the barriers of typical cuisines but still maintaining the timeless traditional flavor and identity, Pullman KLCC’s Sedap Restaurant will be dazzling diners with an array of innovative dishes, condiments and assortments of delectable desserts.

In order to give diners the full Malaysian ambience and experience, the food stations will stretch from inside Sedap Restaurant to the outdoors in front of the hotel lobby main entrance, where visitors can seep in the bazaar ambience while partaking up to 200 different type of dishes!

Some of the definitely not-to-be-missed delicacies are locally infused Takoyaki and Oden, Signature Hot Pot Soup complemented with freshly squeezed Sugar Cane juice, pisang goreng and keropok lekor cheese, cheesy potato twisters and boba tea.

This year’s buffet promotion is entitled ‘Jom Iftar @ Chatz Brasserie’ and will feature over 50 traditional dishes by the hotel’s culinary team who will take you down memory lane, with dishes that reflect mother and grandmother’s cooking.

The buffet will be at the Chatz Brasserie located on Lower Lobby level of PARKROYAL Hotel Kuala Lumpur where diners can enjoy a variety of Malay traditional flavours, live food stall stations and a truly Asia Malaysia culture experience.

Among the signature dishes are Ikan Goreng Kari Pulleh Rangup Johor Berlada Hitam by Chef Isham, Special Nenda Ayam Goreng Inchi Kabin by Chef Hazmi, Kambing Panggang Cik Mek Molek Mewangi by Chef Razalee, Gulai Kawah Pedas Tetel Omak Den with Chef Khairulizam and many more. Special Nenda Ayam Goereng Inchi Kabin is a popular Nyonya dish cooked on ship for the sailors. The chicken is flavored with fennel, cumin, coriander, turmeric, black pepper, chili powder, kaffir lime leaves, coconut milk plus a few more aromatic herbs and then fried using a 32 inches diameter long big Kawah.

For fish lovers, there’s the Ikan Goreng Kari Pulleh Rangup Berlada Hitam station, a classic recipe by great grand mom of Chef Isham. Choose from pomfret, halibut slices or mackerel which you can enjoy with with sambal kalasan, sauce kasturi or ketumbar chili sauce.

Kambing Panggang Cik Mek Molek is a famous Kelantan style barbeque roasted lamb. The roasted whole lamb is marinated with freshly blended pineapple juice, touch of honey and perfumed with freshly grinded Tanah Merah spices. The dish is served together with cinnamon roasted pineapple and moistened with special spicy kuzi raisin sauce, which is a special sauce made of Jabit, spices, tamarind, cashew nuts and dried chilies. Pair the roasted lamb with Middle Eastern ‘mandy’ basmati rice.

Gulai Kawah, a special must have dish at every home during break ‘fast’. Traditionally, parents will wait for the children to be home and then prepare the ‘gulai’ together. The family will enjoy the home cooked gulai during break fast before Isyak prayer. Gulai Kawah Pedas Tetel, braised beef cooked in coconut milk, cloves, star anise cadamon, enhanced with kerisik (fried coconut), gula Melaka (palm sugar and asam gelugor (sliced sour plum).

Mi Kolok, a well-known hawker food and signature noodle dish in Sarawak. Classically served with crushed garlic and shallot, minced meat, spring onion and sliced ‘Char Siew’ chicken coated with shallot oil. The hotel’s special Mi Kolok will be prepared with secret red shallot oil by Chef Stewart.

Look out for the famous Penang Assam Laksa by Chef Chew, served with sliced cucumber, onions, chilies, pineapple julienne, lettuce, mint leaves, ginger bud and rice noodle, in an aromatic and flavourful fish broth.

End the evening with Bubur Kacang Hijau Durian by Chef Azmi, which is a sweet green bean soup boiled with coconut milk complemented with jellies, sticky rice and sago pearls, with a touch of durian.

All the highlighted dishes will be prepared specially by designated chefs from their respective states, where all ingredients are selected thoroughly to ensure the authenticity and originality of each local dish.
