Save the Bees with Bar Trigona

Bar Trigona at Four Seasons Hotel Kuala Lumpur is leading the charge to protect endangered bee populations with its newly launched “Save the Bees” program.

In keeping with its broader philosophy of sustainability, Bar Trigona sources its own honey in small batches from Malaysian farmers. “Buying local honey is the great way to support healthy hives and precious biodiversity,” notes Head Bartender Ashish Sharma. “In fact, we take this hyper-local approach to our entire menu – many of our standout ingredients come from small farms in Malaysia.”

Bar Trigona guests can now adopt a hive of honeybees, installed at Dino’s Kelulut Organic Farm in Negeri Sembilan, Malaysia. Patrons will receive six jars of delicious artisanal Trigona honey, harvested from their very own hive, along with a small bottle of bee propolis, prized for its healing properties. They will also get a personalised adoption certificate, along with quarterly updates on how their bees are progressing. “For those who would like to see their hive and meet the farmers, we will organise a group trip to the farm,” says Ashish. “Our beehive adopters will also receive invitations to special events and a 10 percent discount at Bar Trigona.”

Contributions will go towards preserving safe habitats for honeybees, promoting natural beekeeping methods and training young farmers to support the future of this crucial industry. One can even gift a beehive (it makes a splendid wedding present) or encourage friends to adopt (and get a jar of honey as a thank-you).

Honeybees may seem too small to matter on the global scale of affairs but they are actually a crucial part of nature’s delicately balanced tapestry. Responsible for pollinating 80 percent of the world’s fruits and vegetables, these industrious workers play a vital role in the food supply chain.

Since habitat loss is driving the decline of their populations, one solution is to protect local sanctuaries for bees – which is exactly what Bar Trigona is doing with its new initiative. “Honeybees are an integral part of our story, so this is an issue that is very close to our hearts,” explains Ashish. The bar is named after the stingless Trigona honeybee, which lives in the tropical jungles of Malaysia and produces some of the world’s most sought-after honey.

Guests can adopt a Trigona beehive for an annual contribution of MYR 500. Patrons will receive six jars of artisanal Trigona honey (worth over MYR 1,000 at market price) and a bottle of bee propolis.

For more details, telephone 03-2382-8888, or simply ask for Ashish next time you’re at Bar Trigona.

Chef’s Table 2.0: Bountiful Malaysia

The dining area at Curate has a spectacular view of the KLCC park

Four Seasons Hotel Kuala Lumpur celebrates the vibrant natural abundance of Malaysia with its second edition of Chef’s Table Series in August and September 2019. On an increasingly globalised gastronomic stage, indigenous ingredients tend to get overlooked – especially when it comes to fine dining. With Chef’s Table 2.0, Four Seasons brings the spark of discovery back to Malaysia, putting the spotlight on locally grown ingredients through creative interpretations.

Savour a story of Malaysia, crafted with home-grown produce and beguiling flavours. With a signature seven-course menu that finds its inspiration in the land’s native bounty, Chef de Cuisine Muhd Mujtahid A. Lukman (Chef Matt) takes diners on a culinary adventure that surprises and delights the palate.

“Many of the ingredients will be familiar to our Malaysian guests, but they’ll be cooked and presented in a way that’s never been seen before. We’re taking local favourites and elevating them to a new level,” explains Chef Matt.

Every Malaysian state boasts a profusion of produce – from vegetables grown on the Cameron Highlands to spiny lobster farmed in the seas of Sabah. The signature menu includes creations such as t’lur, udang galah and Sabah lobster.

Hailing from tropical Sarawak, Chef Matt has a deep and abiding respect for Malaysian produce. “I love to bring out the uniqueness of our ingredients by adding a fresh twist. I look at it from different angles: would a dash of this enhance the flavour? Would a touch of that refine the texture? How can we make it look as incredible as it tastes?” he explains. Join Chef Matt for an evening featuring standout ingredients from land and water, many with a legacy of sustainability. Sample these local treasures in dazzling preparations, featuring unexpected combinations and inventive plating of culinary storytelling that takes guests through bountiful Malaysia, from mountain to coast.

Bountiful Malaysia, the second edition of Chef’s Table Series, will be held at Curate on August 9 and 23 and September 13 and 27, 2019 from 7:00 to 10:30 pm. The seven-course menu is priced at MYR 288 per adult (food only) and MYR 588 (with beverage pairing). Prices are inclusive of taxes.

Four Seasons Hotel Milano Launches Dreamy Ice Cream Flavours

The heat wave hitting Europe this month makes it an ideal time to enjoy some creamy artisanal gelato. Talented Pastry Chef Daniele Bonzi of Four Seasons Hotel Milano has created a number of exclusive refreshing flavours elegantly served in colourful cups by Milan-based American designer JJ Martin. With their eye-popping print and sophisticated design, the cups represent everything the city is renowned for: style, fashion and bold design.

JJ Martin’s Milan-based La DoubleJ is known for its stylish clothing and homeware featuring bright fanciful prints and vintage patterns. JJ Martin collaborates with several historic Italian manufactures, modernising vintage prints, archival design with bright colours that recall the fun and quirky designs of the ‘60s and ‘70s. Her lifestyle brand is stocked at luxury department stores around the world, including Bergdorf Goodman in New York, Le Bon Marché in Paris, Lane Crawford in Hong Kong, and Harvey Nichols in Dubai, to name a few.

“Our location in the heart of Milan’s Fashion District means we are constantly inspired by the world of fashion. With the advent of summer and the ever-increasing demand for delicious Italian gelato, we couldn’t think of a better partner than La DoubleJ to design our cups. She embodies the distinctly Milanese penchant for bold, colourful prints,” explains Andrea Obertello, General Manager.

JJ Martin has used her creative flair to design and personalise the Hotel’s ice cream cups and cart, from where a range of exquisite ice creams are served. The playful cart adds a splash of colour to the elegant courtyard, while the ice creams are instantly Instagrammable, with their stylish vibrant cups topped with dreamy flavours.

Pastry Chef Daniele Bonzi has carefully selected top-quality ingredients from Italy and beyond to create refreshing summer flavours: exquisite almonds from Sicily’s Val di Noto, known for their taste and aroma; juicy lemons grown on the shores of Lake Garda; and blue java bananas from Hawaii and Fiji, selected for their sweet juicy pulp and smooth consistency.

The ice creams are served in the hotel’s cloistered garden, a veritable oasis of peace in the heart of the Fashion District. Formerly part of a 15th century convent, the garden was once used to cultivate vegetables and herbs; today, the manicured courtyard is a tranquil spot to sit back and unwind, away from the hubbub of central Milan.

La DoubleJ – Ice Creams by Four Seasons Hotel Milano are available from July 23 until September 30, 2019 priced at EUR 8 (small cup) and EUR 11 (large cup) and can enjoyed in the Hotel Garden, while also being available for take away.

For Garden reservations, telephone +39 02 7708 1477 or head over to https://www.fourseasons.com/milan/ for more info.
