Champagne Brunch at Brasserie Les Saveurs
Brasserie Les Saveurs, at The St. Regis Singapore, launches an all-new Sunday epicurean brunch experience with a refreshed focus on quality and table service. The hotel’s signature dining establishment will be serving an afternoon of culinary delights paired with fine champagnes, elevated by live jazz performances and the St. Regis ritual of champagne sabrage.
The luxurious brunch begins with freshly baked Truffle Bread served with French Beurre de la Maison Bordier à Saint-Malo, and an amuse bouche of Superior Oscietra Caviar with Boiled Egg, Shallot, Sour Cream and Chives. These are accompanied by a selection of pass-arounds such as Fresh Scallop Carpaccio with Piquillo Pepper Jelly and Avruga Pearls, and Confit of Yellowfin Tuna with Crispy Apple and Spicy Tomato Concassé.
The afternoon continues with a selection of sharing plates served to the table on an elegant three-tiered silver stand including French Mulard Duck Rillettes, while sampling from a decadent array of lush salads, succulent seafood, fine cold cuts and more – all from the luscious buffet spread.
The highlight of the brunch is the classic half Maine Lobster Thermidor with Sautéed Spinach, Mushrooms and Thermidor Sauce, Petite Salade and Lemon Wedges which is served as an entrée. Then, choose from a selection of exceptional mains prepared à la minute – from Charolais Beef Striploin with Red Wine glazed Shallot, Pomme Purée and Bordelaise Sauce, to Pacific Cod with Young Spinach, Black Mussels, Pernod and Saffron Emulsion and Dill Oil.
