Celebrate togetherness at The St. Regis Kuala Lumpur this 19 April to 7 May 2021 and take a culinary journey through the 14 states of Malaysia as the hotel’s ‘Malam Warisan Melayu’ menu returns with heirloom recipes from Executive Sous Chef, Norazizi bin Taslim and Banquet Chef, Mohd Ridzwan bin Mohamed Rasit.

Expanding on the hotel’s iconic dishes inspired by each Malaysian state, guests can look forward to Chef Mohd Ridzwan’s highly anticipated “Negeri Sembilan Smoked Lamb Shank with Fresh Turmeric, Bird’s Eye Chili and Fresh Coconut Milk”.

To further elevate the experience this year, Chef Ridzwan has added an array of smoked dishes like, “Smoked Prawns”, “Smoked Spring Chicken” and “Smoked Red Snapper”. Originating from Mambau, a small town in Seremban, Chef Ridzwan’s smoked recipes are family recipes handed down through the generations where the meat and spices are simmered for hours in only water with no oil added.

The must-have dish of the season is Executive Sous Chef, Norazizi bin Taslim’s melt-in-your-mouth, 6-hour braised “Perak Braised Beef Short Ribs”. This year, Chef Norazizi will be introducing indigenous rendang dishes like “Mussels Rendang”“Lamb Shank Rendang Mamak” and “Beef Lung Rendang” – all accompanied with “Lemang”.

Hilton Kuala Lumpur welcomes guests to break their fast at its all-day dining restaurant, Vasco’s, with a buffet dinner centered on iconic bazaar delicacies.

This buffet dinner is part of the nationwide “Chup! Makan Dulu” promotion by Hilton hotels in Malaysia. A classic Malaysian slang, “Chup” is synonymous to the word “pause” and is often used to interject someone in a playful and friendly manner. Through this campaign, the brand wishes to remind Malaysians to take a break from their hectic day-to-day and enjoy quality time with their loved ones over a hearty meal at Hilton.

Headed by a team of experienced chefs who nicknamed themselves Abang Jaguh, each chef will showcase their specialty at the respective stations – Hirup-hirup Sup Berapi Abang Adan, Cedok-cedok Abang Jham, Salai-salai Abang Karim, Celup-celup Abang Syam, Golek-golek Abang Sharil and Manis-manis Rasa Abang Din. EQ returns with Citarasa Nipah, a diverse buffet spread of over 100 delectable traditional Malay and Southeast Asian dishes. The menu will be rotated weekly during the promotional period from 13 April until 31 May 2021, held in Nipah with traditional music performances to set the atmosphere. 

Dig in to crowd-pleasing classics such as the Urap Pucuk Manis dan Taugeh, Kerabu Limau Bali, Udang Harimau dan Kacang, as well as the seafood on ice section which includes myriad fresh selections of mussels, tiger prawns, baby scallops and more. The carving station will feature Kambing Golek and heartier favourites can be found at the main buffet area with dishes like Gulai Lemak Cili Padi Daging Salai, Assam Pedas and the signature Kari Laksa Nipah. The latter is a classic recipe that has been shared over generations of Hotel Equatorial’s illustrious history.  

Chef Ali, the Chef de Cuisine, has more than 30 years of experience up his sleeve. Diners can expect well-known dishes often found in celebratory Malaysian events such as weddings, ’rumah terbuka’ and street carnivals. At the outdoor live station, his signature Briyani Gam Johor Ayam or Daging is cooked with rich spices, vegetables and meat that just melts off the bone.  

Chef Hafizzul, the Executive Chef, has more than 18 years of experience in the industry, working in Michelin-starred restaurants and other 5-star establishments. “Our Citarasa Nipah menu consists of Cambodian, Thai, Indonesian, Peranakan, and Laotian influences which all go well with our staple dish, rice,” said Chef Hafizzul. “Malaysia truly represents Southeast Asia as a forefront of flavours and spices. We wish for our guests to be spoiled for choice with all we have to offer from the region.” 

EQ signature 3-tier tiffin carrier sets in 12CM and 13.5CM sizes with colour options of turquoise, navy blue and purple will be for sale, including the option to purchase specially-picked dining sets for both individuals and families. Each set includes acar, rice, a signature dish, dessert and imported dates.
