We decided to take a drive in the MG Cyberster over to Old Klang Road in Kuala Lumpur to visit TAKEEN Omakase, one of the few establishments in the country dedicated to authentic Kappo-style dining. Amid Kuala Lumpur’s bustling Japanese fine dining scene—where sushi-centric omakase experiences typically prevail—TAKEEN Omakase offers a refined alternative that pays homage to the lesser-known Kappo tradition. This rare culinary art, known as the “art of cutting and cooking,” sets TAKEEN apart by focusing primarily on thoughtfully prepared cooked dishes rather than raw preparations. Over 90% of the menu features carefully crafted cooked creations, moving beyond the conventional raw fish emphasis of typical omakase.
The visionary behind this unique approach is Executive Head Chef Thomas Chan, whose culinary journey spans more than two decades across Japan, Hong Kong, Shanghai, and Malaysia. His philosophy embraces a harmonious balance of colour, taste, texture, presentation, and aroma—the five essential elements that define the Kappo experience.
At TAKEEN Omakase, the essence of Kappo (割烹)—literally meaning the art of cutting (割) and cooking (烹)—comes to life with each dish executed with intention, precision, and reverence for seasonal ingredients. Unlike traditional omakase where minimal handling preserves raw freshness, Kappo celebrates transformation. Through grilling, braising, frying, steaming, and other techniques, ingredients are coaxed to reveal new depths of texture and flavour, enriching the dining experience with warmth and complexity.

Another highlight is the premium Miyazaki Wagyu beef ribs, slow-braised for over eight hours. Renowned for its exceptional marbling and melt-in-the-mouth texture, the Wagyu’s natural tenderness is enhanced through the braising process, resulting in deep, lingering savoury flavours.
Beyond the kitchen, TaKeEn complements its dishes with an artfully curated beverage selection. This includes house-made ume (plum) wine, a limited edition crafted by Chef Thomas using hand-picked seasonal plums, which also feature in select menu items. The umeshu’s refreshing interplay of sweetness and tartness offers an elegant balance to the dishes, creating nuanced pairings.
The restaurant also imports a distinguished range of craft beers, wines, sake, and whiskies personally selected by Chef Thomas. This thoughtful beverage program harmonises with the food’s quality and craftsmanship, delivering a cohesive dining journey.
