Hilton Kuala Lumpur’s Executive Sous Chef Ridzwan Rasit Joins Global Culinary Elite in Australian Lamb Excellence Program

Hilton Kuala Lumpur’s Executive Sous Chef Ridzwan Rasit has emerged as the latest addition to an elite group of international ‘Lambassadors,’ participating in an exclusive culinary program in Victoria, Australia. The initiative, jointly organized by Meat & Livestock Australia (MLA) and the Victorian Government, brought together 16 distinguished chefs from 12 countries, including Japan, the USA, China, and Saudi Arabia.

The week-long immersive experience took participants through Victoria’s premier lamb farms, processing facilities, and culinary destinations. Chefs gained firsthand exposure to local production methods, sustainable agricultural practices, and the exceptional quality that has established Australian lamb as a global leader in red meat production.

The program featured comprehensive workshops, butchery demonstrations, and exclusive visits to renowned Yarra Valley producers. Participating chefs also had the opportunity to engage with industry leaders, gaining deeper insights into Australia’s world-class lamb supply chain and innovative culinary practices.

Chef Ridzwan demonstrated his culinary expertise at a showcase event at Hilton Kuala Lumpur on 15 January 2025, presenting to an audience of approximately 40 specially invited chefs, media representatives, and influencers. The event’s centerpiece was his live demonstration of Lamb Neck Asam Pedas, showcasing an innovative fusion of premium Australian lamb with Malaysian flavours.

During his presentation, Chef Ridzwan shared expert techniques for lamb preparation, including proper handling methods, optimal seasoning approaches, and the effects of various cooking techniques on meat texture. The event also featured a specially curated menu where we got to taste various dishes, including Boneless Lamb Leg Shish Kebab with condiments, Lamb Flap Kabsa, Biryani Rice, and Lamb Meatballs that highlighted Chef Ridzwan’s creativity and mastery in crafting dishes that celebrate both tradition and innovation.

The dishes showcased during the event will be featured in Vasco’s (at Hilton Kuala Lumpur) upcoming Ramadan buffet, running from 1 to 30 March 2025. The Halal-certified menu will be available from 6:30 PM to 10:30 PM, priced at RM238 nett per adult and RM119 nett per child, with complimentary dining for children under 5 years old.
